Instructions

Step 1
Seasoning the chicken thighs with the listed ingredients and you can choose to marinate for 15-20 minutes.

Over medium high heat add olive oil to a large pan or skillet . Once hot add the chicken thighs. Cook on both sides for 5-6 minutes on each side

Once the chicken is fully cooked through , remove and set aside

Lower heat to medium, then add the peppers sauté for a few then add onions.

Add the garlic and jalapeños. Once fragrant add the beans & corn. Season with the listed spices

Cut the chicken into small chunks and add it to a bowl. Add the beans and veggies mix to the chicken & mix.

Clean off the same pan. Lower heat to medium low

Melt the butter in the pan, then add your tortilla. Add the cheese & once it begins to melt add the filling on one side

Fold the other half of the tortilla over and close it up. Pat it down gently to help seal it.

Repeat that process until you’ve made all the quesadillas that amount filling can make.

Cut into thirds serve with the sauce and enjoy
