Instructions
Step 1
Coat a wok with cooking oil, heat and cook the onion until soft. Stir in the curry paste and stir for 1 minute or until aromatic.
Step 2
Stir in the pumpkin and mix to coat with the onion. Add the coconut milk and water. Reduce heat to medium-low and simmer, stirring occasionally, for 10 minutes. Add the beans and cook for a further 5 minutes.
Step 3
Finally, add the fish and cook, partially covered, for 3-5 minutes or until the fish is just cooked through. Add the fish sauce and serve.
