Instructions

Step 1
1 Fill a large pan with salted water and bring to the boil, add in the pasta and cook according to the packet instructions.

2 When cooked drain the pasta, keeping aside some of the pasta water.
Step 3
3 While the pasta is bubbling away, spray a non-stick pan with some low-calorie cooking spray, add in the garlic and bacon and fry off until the bacon has crisped up.

4 In a small bowl, whisk up the egg yolks with the Parmesan.
Step 5
5 Tip your cooked, drained pasta into the pan and mix well with the bacon and garlic so it soaks up all the lovely juices from the bottom, then remove the pan from the heat.
Step 6
6 Now pour in the egg mixture and a ladleful of the pasta water.
Step 7
The egg will cook with the heat of the pasta and the pasta water will turn it into a beautifully glossy sauce.
Step 8
Stir through

7 Serve in bowls with some extra Parmesan to sprinkle over.
