Veggie Samosas with Frozen Paratha

Every Desi household has frozen paratha somewhere in the freezer, and this is a very quick way to make samosas with frozen paratha when you have guests over. Also one of the best ways to make children love vegetables, so do give it a try at home for your loved ones.

Instructions
Step 1
To make the bhaji, cut all the veggies small sizes or to make it faster just put all the veggies in a food processor, and then follow the next step.
Step 2
In a hot pan, put oil and panch phoron, let it come to a slight darker color for 30 seconds, then add chopped onions, and caramelize it. Add ginger, garlic paste, tomato, chopped green chili and all the other spices (red chili powder, turmeric, salt, coriander powder, cumin powder). After two minutes when the tomato is soft, add all the vegetables one by one and combine them well, and add the water. Cover with a lid, and cook it over low to medium flame for 10-15 minutes until the vegetables are soft and smash them well with a potato masher or a hand blender. Add lemon juice, coriander, and toasted cumin. Let the filling cool down before you use them.
Step 3
Take out the paratha to thaw while the bhaji is cooling. If you want to make this quicker, you can thaw the paratha in a slightly warm pan. Put the paratha on the pan for 5 seconds on each side and it’s ready to use (DON’T cook the paratha while you’re thawing it on the pan).
Step 4
Cut the thawed paratha into half, connect both corners in a cone shape, and seal the sides well. Add 1 ½ tbsp filling inside then seal the top. On a baking tray add parchment paper and transfer all the samosas.
Step 5
Beat one whole egg, and brush it on top of the samosa. Sprinkle some sesame seed, and nigella seeds on top. Bake the samosas for 400F for 30-45 minutes until it's golden brown.
Step 6
For the sauce mix all the ingredients in a blender and serve with the samosa, balance the spice and salt to your taste.
Step 7
Enjoy it while it's flaky and hot, with the green sauce.
