Zucchini “Stew”

Instructions

Step 1
Boil zucchini in at least 4 quart pot until tender. Do not peel zucchini.
Step 2
Drain water and remove zucchini from pot to cool.
Step 3
Slice zucchini, then cut slices into quarters.
Step 4
In pot, soften butter then add onion.
Step 5
Sauté onion in butter until golden, NOT BROWN!! Golden!
Step 6
Add spices and mix well.
Step 7
Add corn. If frozen, cook on medium-high heat for a few moments to thaw. If canned, drain water from corn before adding. Mix well.
Step 8
Turn heat to medium. Add chopped up zucchini. Mix well.
Step 9
Add Salsa and sour cream. Mix well
Step 10
Add more spices to taste
Step 11
Let simmer, covered, on LOW heat for 10-15 minutes before serving.
