Zucchini bread
Notes are from aunt Jen.
My own notes:
Baked in 1 loaf pan and 4 mini loaf pans, which was a lot!
Baked for 40ish minutes because the pans were smaller.
Used a little less zucchini (because we didn’t have enough) and it was totally ok! I also did her suggestion of half applesauce and half oil.
I really liked this. Next time: maybe put in a tiny less sugar (1/2 cup or less)and actually put in a cup of raisins (I put 3/4 cup probably).
2 cups is about 1.5 zucchinis. Put in about 1 cup sugar. Used under 1 cup (but probably a bit more than 3/4 cup) of egg whites (from a carton) in place of the eggs. 1 cup of raisins didn’t feel like enough. Baked at 325.
