2 Tbspvegetable oil
4 cupseggplant
1 Tbspcurry powder
2 tspblack mustard seeds
1 tspcumin
1 tsptumeric
1onion
3 tspminced garlic
2 tspminced ginger
2 tspchilli flakes
2 Tbsptomato paste
1 Tbspgaram masala
2 tspcoriander
2 cupscoconut milk
lite pandaroo
2 cupsbroccoli
1 Tbsptamarind paste
salt
to taste
sugar
to taste
Instructions
Step 1
1. Heat the oil in a large pan and add the mustard seeds and cumin. Stir in the turmeric and onion once sizzling and allow to soften for a few minutes
2. Add the garlic, ginger and chilli flakes
3. After a minute, stir in the tomato paste, garam masala and coriander
4. Add a splash of water to the pan and pour in the coconut milk
5. Bring to a simmer and add the broccoli and eggplant
6. Stir in the tamarind and simmer for 5 minutes
7. Taste and adjust the seasoning with salt and sugar
8. Cook rice according to instructions and serve masala on rice
