1 packageTurkey Kielbasa
thinly sliced at an angle
2yellow summer squash
cut in half and then thinly sliced
0.5 packagefettuccine noodles
1red onion
cut in half and thinly sliced
1clove of garlic
minced
1 TBSPbutter
divided in half
¼ tspground mustard
¼ tsppaprika
3 tspdried oregano
½ tspcourse ground black pepper
plus more to top
1 tspsalt
⅛ cupsun-dried tomatoes in oil

Instructions
Step 1
On medium heat, Melt butter and add in the red onion. Cook until fragrant and soft, for about 3-4 minutes.
Step 2
Add in the squash and cook until tender, stirring occasionally to prevent burning. Add in the garlic and spices after a few minutes.
Step 3
Add in the sun dried tomatoes and cook for 3 minutes. Remove mixture from heat.
Step 4
Cook the pasta according to the package, drain and set aside.
Step 5
In a large skillet, cook the Kielbasa with 1 cup cold water (you can also use some red wine). Stir occasionally and cook until the water is gone. Then turn off the heat.
Step 6
Add cooked noodles to the Kielbasa and top with the squash mixture.
Step 7
Top with parmesan, basil, parsley, and rosemary.
