Instructions

Coconut Sticky Rice

Step 1
Wash your sticky rice thoroughly until the water runs clear.
Step 2
In a pot, combine the water, coconut milk, sticky rice and sugar. Bring the pot to a boil, cover with a lid and reduce the heat to low. Allow for the rice to absorb the liquid. This will take about 20 minutes. If using a rice cooker, prepare according to your rice cooker.

After 20 mins, remove the pot from the heat and allow for it to cool for 30 mins.

Coconut Sauce

Step 4
In a separate pot, combine the coconut milk, sugar, salt and cornstarch.

Cook over medium heat until the sauce has thickened a bit.

Remove from heat and let it cool.

Plating the final dish

Slice your mangos.

Place your coconut sticky rice on a serving dish and arrange your sliced mangos to the side of the rice. Pour the coconut sauce over the mangos and enjoy!
