Instructions

Step 1
Spray a large frying pan with low calorie cooking spray, add the minco and fry over a high heat for 4-5 minutes, breaking up the mince with the back of a wooden spoon until browned all over.
Step 2
Add the onion and curry powder and cook for a further 2 minutes.
Step 3
Stir in the tomatoes, vegetable stock and peas, bring to the boil and simmer for about 15 minutes.
Step 4
Meanwhile, cook the potatoes in lightly salted boiling water for 5-6 minutes.
Step 5
Add the cabbage and continue to cook for 4 minutes or until the potatoes are just tender.
Step 6
Drain and set aside.
Step 7
Spray a large frying pan with low calorie cooking spray, then add the mustard seeds, chilli powder and turmeric and cook for 20-30 seconds.
Step 8
Tip in the potato mixture and stir until it is evenly coated with the spices.
Step 9
Cook for 3-4 minutes, stirring until heated through, and serve with the kheema mince.
