Instructions
Step 1
Make cuts in the meat side 30mm square through to the base of the meat only.
Step 2
Mix dry ingredients, except salt and rub into the meat side only.
Step 3
Make a foil tray for the meat with skin side up, dry skin with paper towel.
Step 4
Place foil tray with meat in, in air fryer lightly coat skin with vinegar. Cook for 30 minutes at 95° C.
Step 5
Lightly coat the now dry skin with olive oil and sprinkle with a little salt. Cook for 30 minutes at 200° C.
Step 6
Let it rest for a while then cut and serve.
