Couscous and Tomato Salad

Instructions

Step 1
Cook the couscous according to the package directions and set aside to cool.
Step 2
Meanwhile, in a large bowl, combine the tomatoes, cucumber, feta, and olives (if using).
Step 3
Stir in the couscous.
Step 4
In a small bowl, whisk together the oil, lemon juice, garlic, salt, dill, and pepper to taste.
Step 5
(You could also quickly shake up this dressing in a jar with a tight-fitting lid.)
Step 6
Pour on top of the couscous mixture and toss until well combined.
Step 7
Serve or refrigerate for up to 5 days.
