Instructions
Step 1
Take Boneless chicken pieces. I am taking boneless chicken thigh. Cut in bite size pieces and add in a bowl.
Step 2
For chicken marination, add yogurt , salt and white pepper in chicken. Mix well, cover and marinate for 30 minutes.
Step 3
In a bowl, add cashews and soak in 1/2 cup of warm water for 10 minutes.
Step 4
In a wok, heat up the 3 tbsp of ghee, add sliced onions, ginger , garlic, green chillies and bay leaves. Drain the water of cashews and add in a wok. Cook for 2-3 minutes until translucent.
Step 5
Pour 3 tbsp of water, cover and cook until softened. Take out in a bowl , discard the bay leaves and let it cool.
Step 6
In a blender, add onions, ginger, garlic, green chillies and cashews mixture. Grind to make a fine paste and set aside.
Step 7
In a same pan , heat up the 2 tbsp of ghee, add the paste and cook on low-medium heat until oil separates.
Step 8
Now add marinated chicken and mix well. Cook on high heat for 3-4 minutes.Cover and cook on low heat for another 10 minutes or until chicken is tender and oil separates. After give it a stir and turn off the heat.
Step 9
In the last, add double cream and dried fenugreek leaves (kasuri meethi). Give it a last mix and ready to serve.
