Homemade Caesar Salad

Ingredients
6 servings
3 headsromaine lettuce
washed, chopped into bite-size pieces
2 cupscroutons
¾ cupshredded parmesan cheese
Dressing
Instructions
Step 1
Combine garlic, lemon juice, Worcestershire sauce, dijon mustard, capers, egg, anchovy fillets, and pepper in a food processor or blender. Mix until smooth.
Step 2
With blender on low speed, drizzle in oil in a thin stream. This step will take a few minutes.
Step 3
Add parmesan cheese and pulse to incorporate. Taste and add any additional ingredients until it is the desired taste/texture. Transfer dressing to container and refrigerate until ready to use. In an airtight container, this dressing will keep for up to 3 days. I recommend making this dressing a few hours or up to a day in advance to let the flavors mingle!
Step 4
In a large salad bowl, combine chopped lettuce, croutons, and cheese. Add desired dressing amount and toss salad to coat.
Step 5
Serve with additional parmesan cheese on top, and if desired, lemon wedges.
