One pot sausage and breakfast eggs

Tinned tomatoes can be replaced with fresh baby plum tomatoes; use vegetable stock if the sauce gets too dry.
Replace sausages with chorizo and mixed herbs with paprika for some Spanish flavours.

Instructions
Step 1
Brown sausages. Once browned set aside on a plate
Step 2
Add oil to pan on medium heat and sauté mushrooms and garlic for 3-5 minutes
Step 3
Blend or crush plum tomatoes then add to mushrooms and season with salt
Step 4
Add mixed herbs and stir to combine
Step 5
Add sausages back to pan with the beans and simmer on a low heat with the lid on for 20 minutes
Step 6
Once sausages are cooked make a well in the middle and add all the eggs. Season the eggs with sat and pepper
Step 7
Place the lid back on the pan and allow to cook for a further 10 minutes
Step 8
Serve
