Mango Sticky Rice

I had to recreate one of my favorite Thai desserts! Sticky white rice soaked in sweet coconut milk and fresh mangos!

Instructions
Step 1
Wash your rice well and let it soak overnight in cold water. You can either steam your rice for 40min, or cook in a microwave at 1 min intervals and mixing in between until rice is tender.
Step 2
In a saucepan, pour in the can of coconut milk and sugar. Bring to a simmer, or until the sugar has dissolved. Pour half of the mixture into the bowl of rice. Cover and let it sit for at least 15min until the rice has absorbed the milk.
Step 3
With the rest of the coconut milk mixture, add 2 tsp of cornstarch (mix with some water to create a paste) and put back on the stovetop. Continue to cook it until the mixture thickens slightly. Pour into a cup and set aside for topping later.
Step 4
Shape your rice using a bowl, add fresh mangos, and pour the coconut milk mixture on top. Top with sesame seed and enjoy!
