Instructions
Step 1
In lg. bowl, combine shrimp, olive oil, lemon juice, zest, garlic, red pepper flakes, & a big pinch of salt/pepper. Stir; let sit (10 min.))
Step 2
Heat butter in lg. skillet over med. Once melted, stir in orzo. Cook, stirring often, until orzo is slightly golden & toasty. Stir in garlic; cook (30 sec.)
Step 3
Pour in chicken stock; boil. Reduce it to simmer & place lid on pot; cook (12-15 min.) until orzo absorbs water & is fluffed up.
Step 4
Add shrimp & stir. Cover pot again; cook (5-8 min. longer) until shrimp is pink, opaque, & cooked through.
Step 5
Sprinkle with fresh parsley & a spritz of lemon. Stir in another 1T-2T melted butter. Serve immediately!
