Instructions

Step 1
Heat the oil in a soup pot over medium heat. Add the onion and garlic and sauté for 3 minutes until translucent. Add the ginger and carrot and cook for a further 2 minutes.
Step 2
Add the tomatoes, tomato paste, thyme and stock. Add boiling water until everything is just covered. Cook the soup on low heat for 15 minutes.
Step 3
Add the sugar and puree the soup with an immersion blender or in a blender until smooth.
Step 4
Season the soup with some salt and pepper. Pour the tomato soup into nice bowls and pour in a little whipped cream, a little olive oil and garnish with a leaf of oregano. Nice to eat ciabatta with it.
