Instructions
Step 1
Sprinkle diced eggplant with salt & set aside for 20 minutes
Step 2
Add 4 tbsp olive oil to a deep pan and add onions, chilli & peppers. Cook over medium heat for 10-12 minutes until softened.
Step 3
Add garlic, tomatoes, salt & sugar. Cover, and cook for 10 minutes, stirring occasionally.
Step 4
Fry the aubergine in olive oil for around 4 minutes, then fry the courgette. Fry both until slightly browned.
Step 5
Add the courgette & aubergine to the pan, stir well, over and cook over a medium low heat for 25 minutes. Stir occasionally.
Step 6
Leave to rest for 5 minutes. Serve garnished with chopped parsley or basil.
