Finely Slice the sundried tomatoes and fry in hot oil. While that's cooking, chop your onion and grate the garlic. Remove the tomatoes once they start to colour.

In the same pan, add your onion and fry on a medium heat until translucent

When the onion has softened, add the garlic, cider vinegar, olives and paprika. Stir as it fries for a couple of minutes

Pour in the chopped tomatoes, add the stock cube to the empty tin and top up with water. Add this to the pan.

Simmer with the lid on for 20 minutes, then stir through the butter beans.

Once warmed, sprinkle with the sundried tomatoes and serve.
