Step 1
Heat a large nonstick pan over medium heat. Add the sausage and cook until browned, stirring often. Add the mushrooms, onion, bell peppers, garlic, and broth and simmer for 3 minutes. Add the sweet potato and cilantro and cook, stirring often, for about 3 minutes, until the sweet potato is warm. Pour the mixture over the brown rice and top with salsa.
