Ingredients

1onion
diced finely
1bell pepper
diced finely
1carrot
diced finely
3tomatoes
medium, diced
1 tablespoonmustard
1 tablespooncajun spice mix
300 gramscanned refried beans
300 gramscanned lentils
or homemade, rinsed and well drained
1cob fresh corn
cooked, then slice the corn from the cob
To serve
Instructions
Step 1
Pop your brown rice to cook
Step 2
Heat a small amount of water in a large non- stick pan over medium heat. Add in onion and sauté for a few minutes
Step 3
Add in the bell pepper, carrot, tomatoes, mustard and cajun spice mix, and stir for about 5 minutes
Step 4
add in the rest of the ingredients (beans, lentils, and corn) and mix well
Step 5
continué to cook and stir for about 10 minutes, or until it reaches the desired consistency and all the veggies are cooked
Step 6
serve in a bowl
