Asparagus Fritters with Herb Salad

You will need about 2 bunches of asparagus. If you can't find chardonnay vinegar, use a white wine vinegar or white balsamic vinegar. Use a vegetable peeler to shave the smoked cheese.

350gasparagus
trimmed
185gself-raising flour
180mlbuttermilk
2eggs
free-range, beaten lightly
½ cupfresh mint leaves
loosely packed, shredded finely
4green onions
scallions, sliced thinly
20mlolive oil
1 cupfresh flat-leaf parsley leaves
loosely packed
1 cupfresh coriander leaves
loosely packed
1 cupfresh basil leaves
loosely packed
1 cupfresh mint leaves
loosely packed, extra
2 tablespoonsolive oil
1 tablespoonchardonnay vinegar
100gsmoked cheese
shaved
Instructions
Step 1
Pour boiling water over asparagus in a medium heatproof bowl or dish; stand for 1 minute. Drain. Refresh in a bowl of iced water; drain. Cut asparagus into 1cm pieces.
Step 2
Combine flour, buttermilk, egg, shredded mint, asparagus and half the green onion in a large bowl; season well.
Step 3
Heat 1 tablespoon of the vegetable oil in a large non-stick frying pan over medium heat. Spoon 1 tablespoon measurements of batter into pan; cook, in batches, for 1 minute each side or until fritters are browned and cooked through. Remove from pan; cover to keep warm.
Step 4
Place herbs, olive oil, vinegar and remaining green onion in a medium bowl; toss gently to combine. Season to taste.
Step 5
Serve fritters with salad and cheese.
