Step 1
Peel tomatoes = put on a pot of water and bring to a rolling boil. Use a paring knife to remove the core of the tomato and then cut an “X” in the skin at the opposite end. Drop tomatoes in the boiling water for 20 seconds. Remove tomatoes and place in bowl to cool for 10 minutes. Skins should slip off with ease, use paring knife if necessary.
Step 2
Add peeled tomatoes and all other ingredients to a blender and blend to desired consistency (add water as necessary). Melt a nob of bacon grease in skillet on medium heat, carefully add salsa mixture to pan, and simmer for a minimum of 15 minutes.
