Instructions

Step 1
Mix marinade ingredients together and pour over chicken. Let sit 30 minutes or refrigerate 1-4 hours. Grill chicken on BBQ over medium heat. Chicken breast is cooked when internal temp = 165. Remove from grill, cool slightly and thinly slice. Keep warm.
Step 2
Place the rice ingredients in a greased 9x13 or similar casserole dish. Cover and bake at 350 for 60 minutes.
Step 3
In a medium saucepan, whisk the Caribbean sauce ingredients together over low heat. Simmer 5-25 minutes on low.
Step 4
Toss the shredded cabbage and carrots together. (sometimes you can purchase a mixture of cabbage, purple cabbage, and carrots)
Step 5
To serve: dish up in bowls - first the rice, chicken, sauteed veggies, and cabbage slaw. Ladle a generous scoop of Caribbean sauce over the cabbage, then add remaining toppings to each bowl.

NOTES:

Step 6
Adjust red pepper flakes according to your family's taste - 1/2 tsp. for mild, 1.5 tsp. would make it pretty spicy.

This recipe can easily size up to feed a very large crowd. 3 recipes of rice fit in a 13x20" full size steam pan and this would feed 54.

4 kg chicken is a good amount for serving 20-24 people.
