Instructions
Step 1
Mash cauliflower, mix in mayonnaise, mustard and Spike seasoning. Add celery and mix well.
Step 2
Divide cauliflower mixture between 4 slices of bread. Sprinkle with carrots and top with sprouts or lettuce. Cover with remaining slices of bread, butter both sides lightly.
Step 3
Place sandwiches in panini press. Cook until bread is golden and toasted, and filling is warm, approximately 5-6 minutes. Serves 4.
