Step 1
Preheat the oven to 200°C/gas mark 6.
Step 2
Cook the sweet potato by piercing it a few times with a fork and baking in the oven for about 40 minutes. You could also microwave it for about 10 minutes.
Step 3
While the potato is cooking, make the filling. Slice the peppers and mix them with a splash of oil from the jar, a squirt of sriracha, the chopped coriander and a pinch each of salt and pepper.
Step 4
When the sweet potato is cooked, slice it open, fluff the middle with a fork, season with salt and pepper, then add a dollop of crème fraîche and the pepper filling.
