Instructions
Step 1
Preheat oven to 200C. Add feta, garlic, tomatoes, mushrooms, shallots, basil, rosemary, olive oil, and balsamic to a roasting pan. Season with salt and pepper.
Step 2
Back for 20 minutes. Remove from oven and mix ingredients together, smashing any large bits of feta. Add couscous, kale, and boiling water. Mix and return to oven.
Step 3
Bake for ten minutes. Top with shredded cheese and Parmesan and bake until melted.
Step 4
Serve with freshly cracked pepper.
