Ingredients

3 lbschicken
cut up
28 ozItalian dressing
11 ozArtichokes
quartered and marinated
2Roasted Red Peppers
sliced
14.5 ozFire Roasted Diced Tomatoes
Organic, drained
1.5 ozSun Dried Julienne Cut tomatoes with herbs in olive oil
remove tomatoes from jar with fork
8 ozwhite mushrooms
quartered
8 ozbaby Bella mushrooms
cut in half, then cut in 3rds
0.5Red Onion
1/4 inch thick slices
Pappardelle All'uovo pasta
2 tablespoonsbutter
Shredded parmesan cheese
to taste
salt
to taste
pepper
to taste

Instructions
Step 1
Marinate chicken pieces in Italian dressing (preferably overnight) in 9x13 baking dish. (I had a whole, bone in chicken, cut into pieces).
Step 2
Preheat oven to 325° (we are slow cooking the chicken, for moist and flavorful chicken, intended to be cut up and added to sauce. If you would like to serve it on the side and give it more color, remove sauce from oven. Turn the broiler on, and broil for approx 5 mins (in a separate baking dish) to brown the skin before serving).
Step 3
Cook chicken in dressing at 325° for 1 hour.
Step 4
Remove chicken, and cut into bite sized pieces. Add chicken and juices back to sauce.
Step 5
Mix in and cook mushrooms in dressing. Approx 10 mins.
Step 6
Mix in Artichokes, Cook another 10 mins.
Step 7
Mix in onions, cook 10-15 mins
Step 8
Bring water to boil for pasta
Step 9
Add fire roasted red peppers, fire roasted tomatoes and sun dried tomatoes. Mix in and cook another 10 mins, until warmed throughout.
Step 10
Boil pasta approx 8 mins
Step 11
Drain pasta
Step 12
Add butter to pasta
Step 13
Check chicken is cooked thoughout. Serve Italian Dressing "sauce" over pasta. Season with salt/pepper and shredded parmesan cheese. Enjoy!
