Instructions
Step 1
Blend together the onion, tomato, and green pepper until no chunks remain. Put in a pot to fry with a tablespoon of olive oil until cooked.
Step 2
Add the chopped chicken, garlic powder, cumin, salt, and ground pepper to taste. Add water as necessary to cover the chicken.
Step 3
Cover the pot and cook on medium heat for around 30 minutes, or until chicken is cooked and tender.
Step 4
Add the chopped carrot and potato to the pot and cook for 10-15 minutes more, until vegetables are tender.
Step 5
Taste for seasoning and add more salt or pepper as necessary.
Step 6
Right before serving, add chopped cilantro and turn off the heat.
Step 7
Serve with rice.
