Tuna Wraps

This recipe is my go to healthy work out lunches. I use rice wraps as a gluten free alternative vessel for the tuna and veggies. This recipe is super light and super easy and requires no heat to make.

Tuna Mix

Open the tuna cans and drain out the water. (can reserve for something else)

Combine Kewpie mayo, Sriracha, sesame oil and sesame seeds; mix well and keep aside

Slice the cucumbers with either your knife or a mandolin. (The mandolin will yield more consistent slices).

Lay down the slices and season with the salt and sugar. You can mix the salt and sugar together first for a more even spread. Let this sit for 10-15 minutes.

The salt and sugar will pull the moisture out from the cucumbers making for a more meatier texture.
Prep all other ingrdients

Prepare a bowl of ice water for the cabbage. Peel a few of the outer layers of the cabbage and slices thinly into julienne. Dunk the cabbage into the ice water to makes it fresh and crispy.

Ready the Avocado by halving it and removing the seed. We will be using a butter knife to scrap out long pieces when we assemble the wrap.

Wash and pick the cilantro and Thai basil leaves. Set aside.

Assemble

get a pot or a bowl filled with cold water for the rice wraps. It will need to be big enough to dip the wraps evenly.

Dip the wraps for a few seconds and pull out and drain excess water. Once dipped you can lay flat on your plate or cutting board and start to fill the wrap with all your ingredients.

Now it is basically choose your own adventure in terms of what you put in first. I like to put in the flatter items like cucumber and the herbs first to make room for the bulkier items afterwards.

Wrap like you would a burrito by folding over the top, pulling back; and flipping over the sides and rolling it over to finish.
