Charred Pineapple and Pork Sliders

Instructions

Step 1
1. Stir together ketchup, brown sugar, one tablespoon pineapple juice, and one tablespoon vinegar in a small bowl and set aside

2. combine pork, 1/4 cup scallions, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl and form into eight patties
Step 3
3. Spray large cast iron skillet with cooking spray and heat over high
Step 4
4. Add patties and cook until slightly charred, two to three minutes. Flip and cook until pork is cooked through, about one minute and transfer to a plate
Step 5
5. Add pineapple slices to the skillet and cook on one side until lightly charred, one to two minutes

6. Top patties with pineapple slices

7. Combine cabbage, remaining 2 tablespoons pineapple juice, remaining one tablespoon vinegar, remaining 1/4 cup scallions, remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper in a bowl

8. To assemble sliders, brush bottoms of rolls with ketchup mixture, add a pork Patty with a pineapple slice at the bottom of each bun. Top with cabbage mixture
