Preheat oven to 375
Step 1
Spray lg., rimmed baking sheet with oil.
Step 2
Make crosswise cuts every 1/2” along chicken breast, slicing almost to bottom but not quite through & sprinkling with salt & pepper. Fill cuts alternately with tomato & mozzarella slices; brush with pesto. Transfer to one side of prepared baking sheet.
Step 3
Toss broccoli, oil, salt & pepper in lg. bowl; if there are any tomato slices left, mix them in. Transfer to empty side of baking sheet.
Step 4
Bake (25 min.) until chicken juices run clear & broccoli is tender; rest 5 min. Cut each breast in half and serve with broccoli.
