The best bread for this classic bistro sandwich is a hearty, thick sandwich bread such as Pepperidge Farm (not the thin sliced loaf but the more standard slices). Once the sandwich has been dipped in the beaten egg, it must be set aside so the egg soaks through the bread, allowing the slices to get crunchy on the outside but still stay soft on the "underside".4

Step 1
With the basket in the air fryer, heat it to 375°F.
Step 2
Build a sandwich by setting a slice of cheese on a slice of bread, then 3 ounces ham, then another slice of cheese, and finely a second slice of bread. (The point is that bread is always against the cheese). Repeat if making 2 sandwiches.
Step 3
Whisk the eggs in a shallow soup plate or small pie plate until uniform. Set the sandwich in the beaten eggs, then turn it over, coating both side. Allow the excess egg to slip back into the rest, then set the sandwich on a cutting board for 3 minutes to let the egg soak in. Repeat with the second sandwich, as necessary.
Step 4
Lightly coat both sides of the sandwiches with vegetables oil spray. Set the sandwiches in the basket and air fry undisturbed for 6 minutes, or until the bread has browned and the cheese has melted.
Step 5
Us a nonstick safe spatula, and perhaps a flatware fork for balance, to transfer the sandwiches to a wire rack. Cool for 5 minutes before slicing in half and serving.
