Ingredients

2 lbsstewing beef

½ teaspoonseasoned salt

2 tablespoonsolive oil

1 ½ cupyellow onions
chopped

2 teaspoonsminced garlic

2 teaspoonsherbes de provence

2 ½ cupreduced sodium beef broth

2 tablespoonstomato paste

2 tablespoonsbalsamic vinegar

2bay leaves

1 teaspoonsugar

½ teaspoonsalt

½ teaspoonfreshly ground black pepper

1potato
large, thin-skinned, unpeeled and cut

1carrot
large, chopped

1sweet potato
small, peeled and cut

2 tablespoonscorn starch

¾ cupfrozen green peas

2 tablespoonsparsley
chopped
Instructions
Step 1
Cut the beef into 1- 1/2 inch cubes.


Step 2
Pat beef dry with paper towels. Sprinkle beef lightly all over with seasoned salt.

Step 3
Heat 1 tablespoon olive oil in large pot over medium heat. Add half the beef cubes and cook, turning occassionally, until all sides are lightly brown. Remove from pot and keep warm.


Step 4
Repeat with remaining 1 tablespoon olive oil and beef cubes. Set browned beef aside.


Step 5
Add onions, celery, and garlic to the same pot with 1/4 cup beef broth. Reduce heat to medium. Cook and stir until vegetables begin to soften (approximately 5 minutes).





Step 6
Return beef cubes to pot and stir in herbes de Provence. Add beef broth, tomato paste, vinegar, bay leaves, sugar, salt and pepper. Bring to a boil.









Step 7
Reduce heat to low, cover and simmer for 1 hour and 15 minutes.


Step 8
Stir in white potato and carrot. Cover and skinner for 25 more minutes.




Step 9
Stir in sweet potato and simmer for 20-25 more minutes until vegetables are tender.



Step 10
Mix cornstarch with 2 tablespoons water until smooth. Add to stew and mix well. Continue to cook until skew has thickened.


Step 11
Stir in peas and parsley and cook until peas are heated through, approximately 2 minutes.
