Instructions
Step 1
Cook the pasta in salted boiling water.
Step 2
Melt the butter in olive oil. Then add the garlic and cook for 2 mins.
Step 3
Add the scampi (defrosted) and sauté for 2 mins.
Step 4
Add the vegetable stock, coconut cream and curry paste, then stir and let simmer until sauce has thickened.
Step 5
Add the pasta and parsley (finely chopped) and stir.
Step 6
