Step 1
Heat the oil in a large pan and cook the garlic, ginger and chilli gently for 1-2 minutes until softened.
Step 2
Add the pork and cook for 4-5 minutes until browned, pressing with a spoon to remove any lumps.
Step 3
Pour in the black bean sauce and stir well, then cook for another 4-5 minutes, stirring occasionally.
Step 4
Meanwhile, cook or soak the rice noodles according to the packet instructions.
Step 5
Drain and toss into the pork with the spring onions.
Step 6
Serve straight away.
