250 grambacon
rindless, thinly sliced
40gbutter
400gmushrooms
thinly sliced
5shallots
ends trimmed, thinly sliced or 1/2 thinly sliced onion
0.5 Tspnminced garlic
425mlpouring cream
⅓ cupParmesan
shredded, +, extra to serve
⅓ cupRomano
shredded, if you can’t find Romano, Parmesan can be substituted
Instructions
Step 1
Cook pasta in boiling water until al dente
Step 2
Sauté bacon, mushroom, garlic and onion in butter until tender
Step 3
Add cream and simmer till liquid has reduced
Step 4
Mix through cheese
Step 5
Either stir through pasta or spoon over
Step 6
Top with additional cheese if desired
