Instructions
Step 1
Preheat oven to 400°. Butterfly each chicken breast.
Step 2
In a large bowl, whisk together the salt, bread crumbs, oregano, thyme, and season with pepper.
Step 3
Place flour in a large plate or bowl. In another bowl whisk the eggs and milk together. Dredge breast in flour and shake off excess. Dip in egg mixture and then dredge in bread crumbs. Repeat with remaining chicken.
Step 4
In a large skillet, pour vegetable oil to a depth of 1/2”. Heat oil over medium heat. Fry each breast until golden brown on each side, about 6 minutes. Drain on paper towels.
Step 5
Place chicken in baking dish brushed with olive oil. Cover with marinara sauce and top with Parmesan and mozzarella. Bake until sauce is bubbling and cheese is brown, about 30 minutes.
