Sun Gold Saffron Pasta (sauce)

The best summertime tomato sauce!! Don’t attempt it in the winter. You need tons of sun gold tomatoes which are readily available mid to late summer. Best with short pasta. Add crispy mushrooms for a more hearty meal, and garnish with lots of Parmesan.

Instructions

Lightly brown 1 white onion & half a head of minced garlic

Add herbs (basil, tarragon, oregano)

Add 1/2cup white wine to deglaze

Boil a cup of water in microwave, add saffron and let steep 5 min

Add steeped saffron to sauce, more water if necessary to thin

Season to taste

Cook down for 30 min

Optional 1 tbsp red wine vinegar to taste

Blend! Carefully!

Add 1 cup shaved parm

Add milk (optional, to taste)
