Instructions

Pork & Marinade

Step 1
Trim any fat from the pork and cut into strips about 5cm long and 0.5cm thick. In a bowl place 150ml of the cooled white wine stock. Add a deseeded and chopped red chilli, a chopped onion 1 Tsp Garlic paste 1 Tsp Ginger paste and 2 Tsp Lemon juice. Add the pork and mix well. Allow to marinate for a minimum of 4 hours then separate out the pork, but keep the marinade.

Sealing the Pork & softening the veg

Adding the stock

Add 350ml white wine stock to the pork pepper and onion. Then stir in a mix 150ml single cream, 2 Tbsp from the Parmesan cheese and 1 Tsp garlic paste

Prepare some Long Grain rice

Step 4
Wash 300g Long Grain rice then boil until almost cooked, (just soft to the bite)

Preparing for baking

Take a Large oven proof baking dish and grease with butter. Then add a shallow layer of rice to the bottom

The Pork and Vegetables

Using a slotted spoon place the pork, onion, pepper, and chilli on top of the rice. Retain the stock in the pan for later.

Final layer

Then cover the pork and vegetables with the remaining rice. Taste and season the stock then pour over the rice. To top off sprinkle over the remaining Parmesan cheese.

Baking the dish

Cover the dish with foil and bake for 20 minutes at gas mark 4, then remove the foil and bake on until the cheese has browned.
