French Onion Soup

Ingredients
2 servings
0.5 stickunsalted butter
3red onions
large, or yellow, peeled and thinly sliced into half moons
fresh thyme
or dry
salt
to taste
pepper
to taste
2bay leaves
1 Tbspflour
1can beef stock
water
depends on the onion volume
apple brandy
you can also use white wine and/or dry sherry
olive oil
French bread
cut into croutons
1 ½ cupsGruyère cheese
grated
Instructions
Step 1
In a deep soup pan or Dutch oven melt butter and mix with olive oil. Add onions and cook slowly on low fire, letting onions break down and turn into onion jam. Add flour.
Step 2
Add apple brandy so the onions are just covered with liquid and let alcohol cook out.
Step 3
Add beef stock, thyme, salt & pepper, bay leaves. Also add some water so the onions are actually swimming in soup. Bring to boil. I let it simmer for a while semi-covered, letting the liquids reduce and extract all that onion flavor. Remove bay leaves and fresh thyme.
Step 4
Pre-heat the oven at 400F. Toast the croutons with a drizzle of oil and pinch of salt.
Step 5
Build the onion soup layers in oven-proof small pots - add soup, top with crunchy croutons, top with cheese - and bake for 20 min.
