Instructions
Step 1
Bring large saucepan of salted water to a boil. Rinse spinach and place in colander. Add pasta to boiling water and cook, stirring occasionally, until al dente, about 7 minutes. Reserve 2/3 cup cooking water. Carefully drain pasta over spinach to wilt slightly.
Step 2
While pasta cooks, pat chicken dry and cut into 2 inch pieces. Season all over with salt and pepper. Heat 1 tbs oil in a medium nonstick skillet over medium high. Add chicken and cook until cooked through, about 3 minutes per side. Reduce heat to medium.
Step 3
To skillet with chicken, add pasta, spinach, reserved cooking water, pesto, and all of the cream cheese. Cook, stirring frequently, until sauce is smooth and slightly thickened, about 2 minutes. Enjoy!
