Instructions
Step 1
Cook the pasta in salted boiling water according to the packetโs instructions
Step 2
Melt the butter in a pan and cook the garlic for a minute
Step 3
Add the onions and pancetta and cook for a few minutes until the onion has softened
Step 4
Add the mushrooms and tomatoes to the pan
Step 5
Meanwhile, mix the mascarpone with the juice from half a lemon in a separate bowl/cup/measuring jug
Step 6
Once the pasta has cooked, drain and add to the pan, lowering the heat to low. Make sure to leave a cup of pasta water in case the dish needs watering down later
Step 7
Add the spinach, basil, salt and pepper to the pan and stir until wilted
Step 8
Serve topped with fresh basil and chilli flakes (optional). Enjoy!
