Ingredients
8 servings
For the shrimp marinade
1 lbshrimp
deveined and peeled
3.5 ozchipotle peppers in adobo sauce
3garlic cloves
minced
1 tsponion powder
1 tspblack pepper
1Lime zest
1juice of lime
1 Tbspolive oil
4 ozTequila
Blanco
1 tspsalt
½ Tbspsmoked paprika
For the sauce
4 Tbspbutter
⅓ cupred onion
chopped
2garlic cloves
minced
⅛ cuplime juice
1 cupchicken broth
Red pepper flakes
to your liking
1 cupheavy cream
¼ cuppasta water
parmesan rind

Instructions
For the shrimp marinade
Step 1
Place all of the marinade ingredients in a bowl with your shrimp. Be sure to chop up your chipotle chiles after taking them out of the can.
Step 2
Cover and let shrimp marinade for 15 minutes.
For the sauce
Step 3
On a hot skillet, pour your marinade and shrimp. Cook until shrimp have curled, turned pink, and are no longer translucent. 3-4min
Step 4
Remove shrimp from skillet and set aside.
Step 5
Turn down your heat to medium low. At this point your marinade should have been reduced down by half.
Step 6
Add butter, onion, lime juice and garlic. Cook for 2-3min before adding in your chicken stock.
Step 7
If you wish for a hotter kick, add in red pepper flakes.
Step 8
Add your heavy cream & skim sauce to free it of excess oil.
Step 9
Add your reserved pasta water and small piece of Parmesan rind to help thicken your sauce.
Step 10
Simmer on medium low until sauce has thickened.
For the caramelized bell peppers
Step 11
Melt butter, add in bell peppers, garlic and red pepper flakes.
Step 12
Stirring frequently cook until peppers are tender and slightly brown but not burnt.
Putting everything together
Step 13
Toss your cooked pasta with the cilantro, shrimp , bell peppers, and sauce.
Step 14
Serve immediately and garnish with extra cilantro and freshly grated Parmesan cheese.
