Ingredients
4 servings
¼ cuplemon juice
3 tablespoonsolive oil
or vegetable
2 teaspoonsfresh rosemary leaves
chopped
½ teaspoonsalt
¼ teaspoonpepper
4cloves garlic
finely chopped
1 lbboneless skinless chicken breasts
cut into 1/2-inch pieces
1red bell pepper
medium, cut into 1-inch pieces
1zucchini
medium, cut into 1-inch pieces
1red onion
medium, cut into wedges
1 lbfresh asparagus spears
trimmed
1 cupfeta cheese
crumbled
Instructions
Step 1
Heat gas or charcoal grill.
Step 2
In small bowl, mix basting sauce ingredients.
Step 3
On 4 (15-inch) metal skewers, alternately thread chicken and vegetables, leaving about Ya-inch space between each piece.
Step 4
Brush with basting sauce.
Step 5
Place kabobs on grill over medium heat.
Step 6
Cover grill; cook 10 to 15 minutes, turning and brushing frequently with sauce, until chicken is no longer pink in center.
Step 7
Add asparagus to grill for last 5 minutes of cooking, turning occasionally, until crisp- tender.
Step 8
Discard any remaining basting sauce.
Step 9
Sprinkle cheese over kabobs.
Step 10
Serve with asparagus.
