Instructions
Step 1
Preheat oven to 220 fan
Chop the leek in half lengthways and slice finely
Peel and chop garlic

Add pasta to boiled water and cook for 7-10mins
Not fully cooked

Heat pan with olive oil and knob of butter
Add sliced leek and garlic and cook for 4-5mins

Dissolve veg stock and most of goats cheese in 250ml boiled water Cut cherry tomatoes in half

Add dried oregano to leeks and tomatoes Chop basil
Step 6
Add 1tbsp flour to pan and mix up
Add the cheesy stock and spinach and season with black pepper
Cook for 1-2 mins until thickened
Step 7
Add the pasta to sauce and chopped basil and mix
Put in oven proof dish, crumble remaining goats cheese and top with pine nut & seed mix
Cook in oven for 10-15mins
