Instructions

Step 1
Clean, peel, and chop the potatoes. In a large pot of salted water, boil until fork tender.

Strain the potato water and mash the potatoes. Try to remove as many clumps as possible.

Add a generous pinch of salt to the potatoes, and slowly incorporate the flour. Mix/knead the dough until all flour is evenly incorporated and no large chunks of potato remain.
Step 4
Quarter the dough and roll into long strings. Use a fork to section out individual gnocchis and roll them with the prongs to create the classic gnocchi texture.

In the same pot, add the gnocchi to boiling water, and allow to cook until they float. Once each gnocchi floats, it may be removed from the water.
Step 6
Enjoy warm with your sauce of choice! Works well with the tomato feta sauce used in the “baked feta pasta” recipe!
