3jalapeños
medium, halved and deseeded
1 ½ cupsfresh cilantro
packed
½ cupnon fat plain Greek yogurt
non fat plain yogurt yogurt, or fat free sour cream
2 Tbspfresh lime juice
from about 1 large lime
2cloves garlic
or about 2 Tbsp minced garlic

Instructions
Baja Chicken
Step 1
Zest both the limes and orange(s)and place zest into a medium sized mixing bowl.
Step 2
Juice the citrus and add juice to zest.
Step 3
Slice jalapeños and add to juice.
Step 4
Whisk oil into citrus juice.
Step 5
Peel garlic and crush with garlic press. Whisk into oil juice mixture.
Step 6
Whisk in spices.
Step 7
Add chicken to marinade

Preheat oven to 425℉.
Step 9
Remove chicken from marinade and place into a large roasting pan skin side up. Bake uncovered for 18-25 mins or until internal temperature reads 165℉.
Salad
Step 10
Mix pickled onion ingredients together and let sit for 5+min
Step 11
Mix dressing ingredients in food processor/blender
Step 12
Roast beans and corn in pan until lightly cooked
Step 13
Arrange ingredients and serve
