Garlicky Lemon Orzo
Essentially this is a scampi sauced orzo without the shrimp. A very versatile side dish as it can pair with any protein or veggie. I ate a Mediterranean feta bake on top with lemon garlic marinated chicken.

Instructions
Step 1
1.) Pour 6 cups of chicken broth or if you donโt have chicken broth (I happened to be out) sub with 6 cups of water w/ 2 chicken bouillon cubes in a pot on the stove. Bring to a light boil.

2.) Add 2 cups of uncooked orzo and cook to just shy of Al dente (read the package, but itโs normally about 6-7 min).

3.) Drain orzo, save 1/4 cup of the reserve water and set both to the side.

4.) I used the same pan I boiled the orzo in to make the garlicky lemon wannabe scampi sauce.

5.) Melt a full stick of butter and sautรฉ 8 cloves of garlic (if youโve been following me you know by now there will never be vampires in our house. Garlic is the popcorn equivalent over here ๐
).

6.) Once garlic is fragrant add 1 tbsp of dry white wine, the juice from half a lemon (2-3 tbsp adjust to your liking), 1 tbsp of lemon zest and fresh ground salt and black pepper to taste.
Step 7
7.) Bring to a light simmer before adding your orzo, 1/2 of the reserve water you saved (which is about an 1/8 of a cup) and 1/2 cup of fresh grated parmesan and pecorino Romano.

8.) Shut off heat and mix. Sometimes I add in the rest of the reserve water here and even more cheese depending on the consistency. So use your judgement!
Step 9
9.) Enjoy with sautรฉed veggies, or any protein of your choice! Seafood is amazing with this as well!
